This recipe is inspired by a dad in the NICU, a reminder that they need nourishing meals too. While Mom was enjoying a restorative bone broth I made. I wanted to create something equally comforting and flavorful for him – something that could be easily reheated and enjoyed amidst the hospital visits and emotional ups and downs. These Verde Chimichurri Chicken Enchiladas are my answer.

These aren't your average enchiladas. They're packed with flavor, protein, and a little bit of love. The combination of tangy verde sauce, vibrant chimichurri, and tender chicken creates a symphony of tastes that will leave you feeling satisfied and energized. And the best part? Dad's Delight Verde Chimichurri Chicken Enchiladas

Yields: Approximately 8-10 enchiladas Prep time: 20 minutes Cook time: 30 minutes

Ingredients:

  • 2 cups organic cooked chicken, shredded (rotisserie chicken or boiled chicken breast with garlic salt, cumin, and turmeric)

  • 2 jars verde sauce

  • 3-4 tablespoons sour cream

  • 1 package organic flour tortillas (or corn tortillas)

  • 1 bunch fresh cilantro, chopped

  • 2 cloves garlic, minced

  • 1 shallot, chopped

  • 1 cup blended Mexican cheese (plus more for topping)

  • Chimichurri sauce (Trader Joe's is a favorite!)

Instructions:

  1. Prepare the sauce: In a large skillet, combine the verde sauce, chopped cilantro, minced garlic, and chopped shallot. Simmer for 5-10 minutes to allow the flavors to meld.

  2. Combine chicken and sauce: Set aside one cup of the verde sauce mixture. Add the shredded chicken and one cup of the blended Mexican cheese to the remaining sauce in the skillet. Stir well to combine.

  3. Assemble the enchiladas: Preheat oven to 350°F (175°C). Line the bottom of a foil pan with some of the reserved verde sauce and chimichurri sauce.

  4. Fill the tortillas: Take a tortilla and spread chimichurri sauce on the inside. Add a scoop of the verde chicken mixture and roll up the tortilla. Place the rolled tortilla seam-down in the prepared pan. Repeat with the remaining tortillas and filling.

  5. Top and bake: Spread chimichurri sauce and the remaining reserved verde sauce over the enchiladas. Sprinkle with the remaining blended Mexican cheese. Cover the pan with foil and bake for 30 minutes.

  6. Broil (optional): Remove the foil and turn the broiler on. Broil for 1-2 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.

  7. Serve: Serve the enchiladas warm.
